WARM POTATO AND MAYONAISE SALAD



Potatoes! one vegetable which can be used in any form. there are many types of potatoes. I like red potatoes for my salads, they are less starchy and  can stay firm. Potato salads are made with boiled potatoes and require inexpensive and on hand ingredients. This salad is served as a side dish to any main meal. Goes well with schnitzels. 





Serves 4
Time 30 minutes



5 medium potatoes 
1 medium onion halved and thinly sliced
2 spring onions finely sliced ( green and white)
1/2 cup mayonnaise
2 tbs good quality dijon mustard
2 tbs parmesan grated
3 tsp cider or plain vinegar
salt & pepper
1/2 tsp paprika
1 tbs chopped parsley



Method



Boil the potatoes first in salty water. When slightly warm, cut them quarters.
Add the rest of the ingredients and give a nice stir. Adjust the seasoning. If needed a bit of heat, few chilli flakes can be added too.

Serve it warm with chicken schnitzels, grilled chicken or just have it own its own as a vegetarian meal.
