BRAISED CABBAGE & POTATOES WITH SMOKED SAUSAGES

A hearty and simple dinner recipe. This would be great with corned beef as well as pork or chicken! It's perfect for those on diet.   





Serves 4
Time 35-40 minutes



1 head cabbage shreded
4-6 smoked sauges cut into 1/2 inch
1 white onion thinly sliced
4 cloves garlic minced
chilli flakes (optional)
1/4 tsp fennel seeds
1/2 tsp carway seeds
4 pototoes diced
2 cups chicken stock
4 tbs apple cider vinegra
2 tbs chopped parsley
Salt & pepper 



Method



In a large pan, first, brown the sausages till the edges turn bit brown. Now add the garlic and onions and cook until onion softens about 2 minutes.

To this add the cabbage and the potatoes, fennel seeds, caraway seeds and chilli flakes if using, season it well. Add the chicken stock and vinegar. Give it a stir.

Cover and cook for 20-25 minutes until pototoes are tender. Now stir in the dijon mustard and 1 tbs of parsely.

Serve it hot in a bowl topped with more parsley adn a dollop of sour cream if you like it and a sour dough bread to mop the broth.
