MEETHI MATRI (SWEET FRIED BISCUITS)





Makes  about 1kg
Time: 40 -45 minutes


1 cup water
1/3 cup sugar/gur/ jaggery
1/3 cup ghee
2 cups plain flour
1 tsp cardamom powder
Oil for frying

Method

Heat the sugar and water in a pan until the sugar is dissolved.



Add ghee to the sugar and water mixture and bring to a boil.



Add the flour in 1/4 at a time and fold. 


The dough should come together as a soft pliable dough. It is ok if the little flour is left behind. This will be used in rolling and cutting.



Knead the dough well and divide into 2 balls. 



Roll each dough to a 1/3rd thickness and using a sharp knife or pizza cutter cut the diamond shapes as in the picture.



Fry them till golden brown and crisp. Keep on moving the matri for even colour and cooking



Store in air tight container and have it with tea or coffee. 

TIP: This recipe is easily doubled. I like to make small batches.
