A very simple meal for dinner. Instead of pork, pounded chicken breast can be used. I used clarified butter to shallow fry the meat. Clarified butter did make difference in the taste. I served the red cabbage which was made last Christmas ( yes! it stayed for that long.) and the creamy garlic mashed potatoes. You do not need any sauce for this dish as the creaminess of the mash and the red cabbage is sufficient.

Time: 35-40 minutes
Breaded parmesan pork chops/chicken
2 pork chops or chicken breasts pounded/flattened
1 cup panko bread crumbs (normal will do too)
1 tsp dry sage
Salt and pepper
1 egg beaten with 2 tbs water
1/4 cup parmesan
2 tbs plain flour
2 tbs clarified butter
1 tbs olive oil
Garlic mashed potatoes
4-6 potatoes peeled
2-4 cloves garlic
Salt and pepper
1/4 cup hot milk
2 tbs butter
Red cabbage
2 cups shredded red cabbage
1/4 cup brown sugar
1 tsp salt
1/4 cup vinegar
1 small piece of cinnamon stick
Method
If you like sweet and sour cabbage, then begin with this first. Heat 1 tsp of olive oil, add all the ingredients and let it cook on slow heat. It will be cooked as rest of the stuff are being prepared.
As the cabbage is in the cooking process, boil the potatoes with the garlic. Strain and mash them together. Add the butter, milk and the seasoning. Keep it warm.
Now for the chops, mix the parmesan, panko crumbs, sage, salt and pepper in a bowl. In another bowl keep the beaten egg with water ready. To prepare the meat, dust the meat with the plain flour, then dip in the egg wash then in the panko bread mix. Shake the excess. Refrigerate in the fridge for few minutes.
Heat the pan with clarified butter and olive oil, place the meat and cook both the sides for 3-4 minutes until golden brown. Remove and serve immediately with the mashed potatoes and red cabbage.
One comfort meal ready.
