BROILED TILAPIA FILLETS TOPPED WITH TOMATOES AND PESTO

Can't be easier than this.  It is packed wth flavours and yet a simple meal. All you need is green pesto on hands rest of the ingredients are always in the kitchen. Spice it up with some chilli flakes if you like an extra kick. 



Serves 2
Time: 35 minutes


2 tilapia fillets or any white firm fish
2 tbs green pesto
1 garlic clove
1 big tomato chopped or handful of cherry tomatoes halves
1/2 cup parmesan cheese grated
1 tbs lemon juice
Salt and pepper
1 tbs olive oil
1 tbs chopped parsley
Chilli flakes (optional)



Method

Add the olive oil in an oven-proof pan and arrange the fish fillets. season with salt and pepper and cover the fillet with grated parmesan cheese. Place the pan under the broiler at 200'C for 10 minutes so that the cheese has melted and created a crust on the fish. Remove the pan, spoon the pesto on the fish.


For topping the fish, mix the chopped tomatoes, parsley, garlic, lemon juice, salt and pepper. Spoon this mix on the fish and return the pan to the broiler for another 10 minutes until the tomatoes are slightly softened but not mushy. 


Dish out the fillets in 2 plates and serve with toasted bread on the side to mop the juices.
