Always have cheese in the fridge, it will always help you in making a quick dinner meal for yourself and the family. I am happy that my family loves vegetables and this recipe is the best way to get the cauliflower or the broccoli into their mouths. And who doesn't love CHEESE!
Serves 4
Time: 20-25 minutes
1 head cauliflower cut into florets
1 cup cooked chicken shredded
2 tbs olive oil
2 leeks thinly sliced
150 ml milk
2 tbs wholegrain mustard
250-gram cream cheese
2-3 tbs fresh bread crumbs/panko
1/2 cup finely diced cheddar cheese
1 tbs chopped parsley for garnishing
Method
First, preheat the oven to 200'C.
Boil the cauliflower in the salt water for 5 minutes. Remove and strain. Divide the florets into four bowls. Sprinkle the shredded chicken and keep them aside.
Heat 1tbs oil in a pan, add the leeks and fry for 5 minutes to this add the milk, mustard and the cream cheese. Stir it well and pour over the cauliflower.
Mix the breadcrumbs, 1 tbs olive oil, cheddar cheese, parsley and pepper. Sprinkle this over the top. Bake for 15 minutes until the top is golden and bubbling.
You can make it as a vegetarian meal by not adding any meat. One can also add the broccoli to it. Serve it with roasted potato wedges or a crisp salad with lemony dressing on the side.
