Another easy and delicious meal for dinner with simple ingredients. Charred tomatoes work well as a side. If you don't like raisins, you can omit.
Serves 2
Time: 35-40 minutes
For the lamb chops
4 lamb chops about 1 1/2 inch thickness
1 tsp lemon zest
2 tbs lemon juice
Salt and pepper
2 tbs olive oil
For the couscous
2 cups cooked couscous
1/2 cup raisins soaked in hot water
1 tbs chopped mint
1 tsp lemon zest
salt and pepper
1 small onion chopped
2 garlic cloves minced
1 tbs butter
2 big tomatoes halved
1 tbs chopped parsley or coriander
Method
Marinate the lamb chops in its ingredients for 10 minutes. Then heat a pan on high heat and cook the lamb chops on each side for about 3 minutes on each side.
While the lamb chops are being cooked. In another pan, heat a tbs of butter. To this add the onions and the garlic. saute them lightly and add the raisins. Cook for a minute or two and then stir in the lemon zest and couscous. When the couscous has heated through stir in the mint. Remove from the heat and keep it warm.
Char the tomato halves in the lamb pan, as this will bring the meaty flavour to them. Season them.
Serve the couscous on the plate topped with 2 lamb chops each and tomato halves on the side sprinkled with chopped parsley or coriander.
