Zingy pancakes for any time of the day. Serve them with syrup, honey or ice cream or whipped cream. Kids and adults enjoy them. They are easily frozen if doubled the batch.
Makes 6-8
Time: 20 minutes
1 1/4 cup self-raising flour
1 tsp lemon zest
2 tbs caster sugar
1 tsp baking powder
1/4 tsp salt
2 tbs melted butter/oil
1 tbs lemon juice
1 egg
3/4 - 1 cup milk
1 tsp vanilla
Butter to brush the pan
Method
Mix the dry ingredients in one bowl and wet in another.
Fold the dry in the wet well.
Using a ladle drop the batter on medium heated greased pan. Cook one side for few second till the bubbles start appearing and then flip. When the pancake has risen, remove and keep them warm it serving time.
Serve the pancakes with syrups of your choice and fresh fruits and berries. Enjoy.
