An easy take on beef/chicken chilli. This chilli is super easy and made with sausages. All you need are good quality sausages. I bought mine from Gilani's.
Serves 4-6
Time: 35-40 minutes
4 Mexican hot sausages
1 cup chopped onion
2-3 garlic minced
1 can chopped Italian tomatoes
1 can refried beans/ red kidney beans/ mixed beans
1/2 cup grated cheddar cheese
Avocado slices ( optional )
1 tsp Mexican seasoning
2 tsp paprika
1/2 cup sweet corn kernels
A few coriander leaves to garnish
Lime slices
Method
First, brown the sausages, this will take about 5-7 minutes on medium-high heat. Let it cool and slice in diagonals.
Now in another pan, cook the onions and the garlic till slightly browned on the edges. Add the diced peppers and cook further for 5 minutes.
When the peppers are glossy, add the beans, corn, tomatoes, paprika and Mexican seasoning. Pour in 1 cup of water and simmer for 10 minutes.
When it has thickened slightly add the sliced sausages and stir and cook further for 5-8 minutes.
When cooked, serve in an individual dishes with some cheddar cheese sprinkled on the top and bolillos on the side or any bread or rice will do too.
If you love avocados, feel free to garnish with them and a slice of lime on the side
