Gourmet potatoes, don't worry, it's nothing fancy about it. They are simple mashed potatoes mixed with vegetables like carrots, peas, onions etc. They mostly served when serving Chrismas, Thanksgiving day or occasions like that. I served it with the sausages because it brings the whole meal together in an easy way. You have your meat, vegetables and carbs altogether in less time. It is nice comfort meal. Pork sausages can be substituted with beef or chicken or turkey.
Serves 2
Time: 30 minutes
For the gourmet mashed potatoes
4-6 medium potatoes peeled
2 small carrots diced
2 garlic cloves minced
1/2 cup chopped green beans
1/2 cup peas
2 tbs butter
1/2 cup hot milk
Salt and pepper
For the sausages
4 pork and apple sausages ( plain sausages can be used)
1 tbs plain flour
1 tbs butter
1 tbs oil
1 tbs oil
Salt and pepper
1 tbs chopped parsley
1 cup beef/chicken/vegetable stock
Method
Start with the potatoes first. Boil them in salt water. When they are almost cooked, tip in the green beans, garlic and the carrots. Cook for few minutes and in the last 2 minutes add the peas. When cooked, drain it and roughly mash it ( do not make it smooth ). Add the butter, milk and the seasoning and mix it thoroughly. Keep it warm till the serving time.
As the potatoes are being prepared, sausages can be cooked. Heat the pan and brown the sausages in the oil. Remove and keep aside. In the same pan add the butter and the flour. Cook it. Then add the stock and the seasoning. Let it bubble up and then tip in the sausages with any juices which came out of it. Cover and cook for 5-8 minutes till the sauce thickens. Sprinkle the chopped parsley.
Serve the mashed potatoes on the plate with two sausages per person and spoon the sauce over.
