PUFF PASTRY WRAPPED JALAPENOS POPPERS WITH MEAT MINCE AND COUSCOUS

Jalapenos stuffed with minced beef/lamb and couscous is really amazing and that too topped with puff pastry. You can also wrap it in bacon. Serve it with blue cheese sauce.



Serves 4-6
Time: 35-40 minutes

For the poppers
250 grams beef/ lamb mince
1/2 cup cooked couscous
1/4 cup chopped fresh coriander
2 small onions chopped finely
1/2 cup tomatoes chopped finely
Salt and pepper
1 tbs paprika
1 tsp cumin
2-3 spring onion sliced thinly
20-25 jalapenos
2 tbs black sesame seeds

Blue cheese dipping sauce
1 cup sour cream
1/4 cup crumbled blue cheese
1 garlic minced
2 tbs mayonnaise
1 tsp lemon juice
1-2 tbs milk to thin out 

Method

Cook the minced meat till browned and then when it cools down add the rest of the ingredients and mix well.


Clean the jalapenos, make slit sideways. Remove the seeds. Stuff the meat mix and keep aside.


Now roll the puff pastry into a rectangle and cut into strips. Roll these strips around the jalapenos.


Brush the egg wash on the jalapeno rolls and sprinkle some black sesame seeds and bake in preheated oven at 200'C till puffed and golden in colour.



To make the dipping sauce, mix all the ingredients and adjust the seasoning.

Serve these poppers with blue cheese or simply with any sauce.
