INSTANT STRAWBERRY CHEESECAKE

Beautiful dessert, which turned out from all the leftovers in my fridge. I had some strawberries and raspberries from the smoothies, the condensed milk from fudge and of course a few scoops of strawberry ice cream. To give crunch I used oats and coconut cookies and few crushed meringues. Then I topped the dessert with marshmallows which were blowtorched. It is the best way to finish off the leftovers in the fridge and at the same time a lovely treat for the family at the end of the week. 



Serves 2
Time: 30 minutes ( plus chilling time)

2-3 scoops strawberry ice cream
A handful of fresh strawberries
A handful of meringues
2-3 tbs condensed milk
1/2 cup yoghurt
A few marshmallows
4 Oats and coconut cookies crushed 
Raspberries and mint to garnish



Method

Tip ice cream, condensed milk, strawberries and yoghurt into a food processor and whizz it till all mixed well. Do not make it too runny. Then place it in the freezer till you assemble the other ingredients in the glasses/bowls.



Now, crush the cookies roughly divide into 2 glasses. ( You can use any cookies. I used these cause oats, coconut and a bit of chocolate goes well with strawberries)


Spoon/ladle the ice cream mix equally into the glasses half way. Top it with crushed meringues then spoon ice cream mix again. Arrange the cut marshmallows if they are big or simply scatter the small ones and blowtorch them to caramelize them. 



Garnish with raspberries and mint and serve chilled. 




TIP:  You can use any ice cream and berries. Just play around with the ingredients to get your taste. Do add some alcohol if like boozy desserts ( only for adults ).
