MUSTARD AND HONEY LAMB CHOPS WITH BABY POTATOES AND TZATZIKI

I cooked this the other night and it was a success. We all liked it. Normally honey and mustard and lemon juice ae used as a salad dressing but if the lamb chops are marinated in this mix it turns out very good. It makes the chops succulent and well-seasoned potatoes with crisp sugar snap peas just compliment the dish. Try it.




Serves 2
Time: 35-40 minutes



For the marinade
2 tbs dijon mustard/English mustard
3 tbs honey
1 tbs lemon juice
4 lamb chops

For the potatoes
250 grams baby potatoes, boiled and halved
1 garlic clove minced
1 tbs chopped mint
1 tbs olive oil
Salt and pepper

1/2 cup tzatziki 

1 cup sugar snaps steamed



Method


Mix the ingredients in a bowl and marinate the lamb chops for 10 minutes



After 10 minutes, heat the grill pan and cook the chops 3-4 minutes on each side. While the lamb chops are being cooked, prepare the potatoes. Mix in the chopped garlic, mint, salt and pepper and olive oil. Keep them warm. Prepare the sugar snaps by steaming or blanching them.



Once the lamb chops are cooked, serve 2 chops with potatoes and some sugar snap on the side in a plate. Spoon some tzatziki on the lamb chops.
