SPANISH LAMB CHOPS WITH SALSA

Easy lamb chops recipe. This can be marinated a night before. If you have bbq for the family or friends, this is the perfect recipe. I served with baked sweet potato wedges. Sweet potatoes can be substituted with potatoes. The salsa can be served with not only these lambs chops but also bbq chicken, paneer or steaks.




Serves 2
Time: 40 minutes


Lamb chops
6 lamb chops
2 tsp Spanish paprika
1 tsp fresh thyme
Salt and pepper
2-3 tbs olive oil
A pinch of cayenne pepper ( optional )

Salsa
1 plum red tomato  chopped
1 big onion finely chopped
1 hot chilli chopped
A small bunch parsley chopped
Salt and pepper
1/8 cup olive oil
2 tbs red wine vinegar


Method


Mix the lamb marination ingredients in a bowl and rub it thoroughly on the lamb chops. Marinate them for at least for 30 minutes or overnight.



For the salsa, finely chop the ingredients or if you have a big pestle and mortar, crush the ingredients in it. Season it well. 


Heat the oil in a pan and grill the lamb chops for about 3-4 minutes on each side or grill them on charcoal. 

Serve the lamb chops with the salsa and oven baked sweet potato wedges on the side.
