There is nothing tastier than these chicken wings, tossed in butter and olive oil mix and flavored with lemon juice, parsley, garlic and parmesan cheese. If you have buddies over then do make these. The recipe can be easily doubled. If you want it bit hot some chili flakes can be added. Serve it with baked potato wedges and a parsley garlic mayo dip on the side.
Serves 4-6
Time: 45-50 minutes
For the chicken wings
1 kg chicken wings, tips removed and wings cut into halves
Salt and pepper
2 tbs olive oil
For the sauce
1/8 cup butter
1/8 cup olive oil ( good one)
2 garlic cloves roughly chopped
1/4 cup chopped flat parsley
2 tbs lemon juice
salt and pepper
Method
Toss the wings with salt, pepper and olive oil and tip it into a hot preheated oven at 200'C in one single layer. Bake the wings for 25-30 minutes till golden and crisp. Then remove in a bowl and prepare the sauce.
For the sauce, heat the butter and oil in a pan first. Then add the garlic and parsley. Cook for a minutes and switch of the heat.
When the heat is off, add the lemon juice and the parmesan cheese. Season the sauce well. Extra freshly ground pepper does give an oomph factor. Then pour the whole mixture over the chicken wings. Toss it well and serve.
You can either serve at this point or tip it again in the hot oven for 5 to 8 minutes to get extra crisp. Either way, the wings taste good.
I served the wings with baked potato wedges, which were simply tossed in olive oil, salt, pepper nad mixed herbs.
