BRAISED ONIONS WITH CHICKEN

This is a one pan dish meal. so easy to cook. It can be cooked in the oven or on the gas top on a low heat. Mashed potatoes or rice goes well on the side. Here I served with the mashed potatoes. 



Serves 1
Time: 35-40 minutes



1 chicken quarter with the skin on
2 medium white onions sliced
2 tbs olive oil
1 tbs chopped parsley
Salt and pepper


Method

Preheat the oven at 200'C.

Season the chicken quarter liberally with salt and pepper.  drizzle some olive oil in the baking dish.  Arrange the sliced onions with some seasoning. Place the chicken on it.


Bake the chicken till the skin of the chicken is golden and crisped and the onions have started browning. This will take about 25 minutes in 200'C in the oven.


Remove and let it rest for 5 minutes and then serve with hot mashed potatoes or rice with some chopped parsley on the top.
