ANDA BHURJI (INDIAN SCRAMBLED EGG)

Indian scrambled eggs perfect for breakfast or can be served at any time of the day. Some eat it with bread or chapatis or sandwiched in buttered buns. Anywhere in the south Asian countries be it in India, Pakistan or Bangladesh, this is most famous and quick selling street food. One can add lots of chopped veggies to it or just the onions and chillies with some basic sppices. It's totally up to one's taste. It is very easy to make.


Anda bhurji/Indian scrambled egg



Serves 2
Time: 30 minutes


4 eggs
1 medium onion finely chopped
1-2 green chillies chopped
1 medium tomato chopped
1 garlic clove crushed
1 tsp garam masala
1/4 tsp cumin powder
1/4 tsp turmeric
Salt and pepper
3 tbs oil 
2 tbs chopped fresh coriander


Method


Heat a pan with oil. Add the onions and fry them until light golden brown ( many fry them till dark brown but this kills the sweet taste of the onions and gives a brown tinge to the dish). Then add the garlic, green chillies and the tomatoes. Cook for few minutes till the tomatoes have softened but not mushy. 

Add the beaten eggs and stir well continuously for few minutes till the eggs have broken down and just started setting. Now add the garam masala, cumin powder, turmeric and salt. Keep on stirring. 

Add the chopped coriander to the eggs and mix. Serve with whatever you may like with extra coriander garnished on top.


TIP: If you want to add different veggies, just saute them in after the onion cooking process so that the veggies are not totally cooked and they still have a crunch to it. You can also add grated cheese to it.
