I love mushrooms. This is the best vegetarian dish to serve one meal or as a side dish with any kind of roasts. I personally like it just the way I have prepared. They don't even take so long to cook. If you have mushrooms in the fridge, your dinner is sorted in no time. It has nice lemony taste and a pinch of spice to it and a good quality paprika gives it a beautiful red colour. You can cook this on the stovetop or in an oven also. Serve it with a crusty bread and aioli on the side.
Serves 4
Time: 30 minutes
2 pkts mushrooms or 500 grams
2- 3 cloves garlic crushed
1 tbs paprika
2-3 tbs lemon juice
2 tbs butter
3 tbs olive oil
Salt and pepper
cayenne pepper according to the taste
Method
Clean the mushrooms and slice off the stems. Dry them completely so there is no extra moisture left ( cause if there is moisture, mushrooms tend to get soggy).
In a pan heat the olive oil. To this add the mushrooms first. Saute it on medium heat till they are a litttle bit browned around. Then add the crushed garlic. At this stage, you might notice that the mushrooms might have soaked the olive oil in, so just add a splash of water.
Add the lemon juice, salt, pepper, cayenne pepper and paprika to it. Give it a good shake and stir.
When the mushrooms are almost done, add the butter and swirl the pan so it melts and remove the pan from the heat. Stir it nicely.
Dish it out in a bowl and serve.
For those using an oven, mix the above ingredients except the butter and cook in a preheated oven at 200'C for 20 minutes. Then add the butter and cook further for 5 minutes till the butter has melted.
