MATHI (SAVOURY FRIED BISCUITS)




Makes 2 plus kg
Time: Less than hour

4 cups/500grams plain flour
1 tsp salt
1 tsp fresh ground black pepper
1 tbs carom seeds/ajwain
1/2 cup olive oil/ melted butter/ vegetable oil ( your choice. I used 1/4 oil + 1/4 melted butter)
Enough warm water to knead the dough


Method


First, rub the oil/butter in the plain flour. It should resemble like thin crumbs. To this add rest of the ingredients and make a  soft dough with warm water and let it rest for 10 minutes wrapped in moist kitchen cloth. ( for extra flavour I also added 1 tsp of  the garlic chutney).



Roll this dough into a log and cut into 4 equal portions and roll these portions into long tubes.


Cut these long tubes into equal pieces. I use my thumb for the equal measurement and it doesn't fail me.


Press these pieces with back of a glass or roll it with rolling pin to a 1/3rd  of an inch and keep aside.


Using the tip of the knife make few incisions on the rolled mathi.


Fry in a hot oil till golden in colour. 


Store in airtight container or serve with tea.
