TURMERIC & GARLIC RUBBED COD WITH SPICY CAULIFLOWER RICE



Serves 2
Time: 30-35 minutes

For the fish
2 fillets cod
1 tsp turmeric powder
Salt & pepper
1 tbs olive oil

For the cauliflower rice
1 head cauliflower cut in florets (4 cups )
1/2 onion finely chopped
1 hot green chilli
1 tbs coriander/parsley chopped
1 clove garlic minced
1 tbs lemon juice
Salt & pepper
1 tbs butter/olive oil ( I'd prefer butter for the taste)


Method


First, mix the garlic chutney, turmeric, olive oil and seasoning in a bowl and rub it in the fish fillets with your hand and let it sit to marinate till you are done with the cauliflower rice.



For the cauliflower rice, boil or steam the cauliflower florets till al Dante. Remove and tip it in a chopper. As it cools down, saute the onions and garlic together in a little oil till softened only. Tip this mix in the cauliflower with green chilli and blitz on pulse button. You do not want to puree it but just to have a couscous kind of texture. 


Heat a pan with butter/oil and tip in the cauliflower rice and cook for 5 to 8 minutes on high heat stirring constantly. Season it and garnish with fresh chopped parsley or coriander.



Just remember when you are about to work with cauliflower, just put the fish in the preheated oven at 200 - 220'C for 10 to 15 minutes. You just want the fish to be flaked not charred or broiled.


Serve the fish immediately on a plate with good spoon fulls of cauliflower rice. 


TIP: I used the garlic chutney, which I made few days ago with Millet/ Bajra chapati to marinate the fish and it gave a very nice flavour. You can cook chicken or lamb chops also with the same marinate and serve with cauliflower rice.
