CHICKEN LEG QUARTER WITH ONIONS SERVED WITH ROAST POTATOES






Serves 1
Time: 30 minutes


1 chicken leg quarter
2-3 medium potatoes halved
1 medium white onion sliced
2 tbs olive oil
1 tsp paprika
1 tsp garlic powder or 1 garlic clove minced
A pinch of turmeric
Salt & pepper


Method


First, preheat the oven at 200'C. Toss the potatoes with 1 tbs oil, salt and pepper and roast them in the oven for 20-25 minutes till cooked through.


As the potatoes are roasting in the oven, prepare the chicken leg. Make pockets under the skin by pushing your fingers in. Mix the 1 tsb oil, turmeric, garlic powder, paprika and salt and pepper. Stuff the oil mixture under the skin. Reserve little for the top.


Now take the baking dish. Rub little butter or oil on it and arrange the onions. 


Now take the reserved oil mix and mix in 1 tsp butter and rub on the skin. Bake this in 200'C for 10 minutes till golden in colour.



Serve the chicken with the onions and it's juice on chicken and the roast potatoes.
