COD GOUJONS ON SWEET PEA MASH

This is loved by both adults and kids. 




Serves 2
Time: 20 -30 minutes



2  fish fillets cut into batons ( 4-inch long x 8 pieces)
1 cup bread crumbs
1/2 plain flour
2 eggs beaten
Salt & pepper
2 cups peas
1 tbs mint leaves
3 tbs cream/milk
1 tbs butter
1 tbs parmesan cheese
Oil for frying
2 lemon wedges


Method

Lighty season the fish and keep aside, Arrange the breading station. Flour the fish batons, then dip in the egg mix and then bread in bread crumbs. Refrigerate. 

                       


In the meantime, boil the peas. Strain the water. Add the mint leaves, butter and cream/milk and mash it coarsely. Keep it warm.


                                             


Heat the oil for frying, fry the goujons till golden brown. 

Serve the goujons on the sweet pea mash. Sprinkle the parmesan cheese on top and a sliced lemon wedge on the side.
