GREEK LAMB AND OLIVE STEW

 A few ingredients and tasty meal on the table.





Serves 4
Time: 30-40 minutes


500-600 grms lamb cubes tossed in 1 tsp baking soda
1-2 tbs olive oil
2 tomatoes chopped
1 green bell pepper
1 medium onion chopped
2 garlic cloves minced
1 cup black olives pitted and whole
3 tbs red wine
300 ml stock
1 tsp dried rosemary
Salt & pepper
2-3 tbs chopped parsley




Method


Marinate the lamb cubes with baking soda for at least 10 to 15 minutes. Baking soda works as well meat tenderizer. Wash it and then season the lamb cubes with salt and pepper.



Heat the oil in the pan, brown the lamb cubes. Remove and set aside.


In the same pan, add the onions and garlic and saute for a minute. Onions should soften but not change the colour. Now add the peppers and tomatoes. Saute for 3 to 4 minutes. Add the olives and stir. 


Pour the red wine in.




Pour the stock in and return the lamb cubes.



Now add the rosemary  and seasoning and cover and cook for 20 minutes until thickened.



Garnish the lamb stew with lots of chopped parsley. Serve it buttered couscous.
