MURUKKU / CHAKLI / CHAKRI


Normally it is made in spiral form. I make it in a sev form but with chakri plate. I added oat flour to the mix. It did give a nice texture. The reason I make like this is because of the kids. They don't waste it and especially for smaller kids to hold in hand to munch on. 





Makes 400-500 gram
Time: 30 minutes



2 cups rice flour
1/2 cup oat flour
1/2 cup chickpea flour ( besan) 
2 tsp hot oil
1/2 tsp chilli powder ( optional) 
1/2 tsp semi ground cumin
1/4 tsp asafoetida 
1/4 tsp aniseed ( ajwain)
1-2 tsp sesame seeds
Salt
enough warm water to knead


Method


Mix the ingredients in a bowl.

Make the dough with warm water and keep it aside for few minutes. 



Using this sev machine make the chakri/murukku with star hole plate.


Stuff the dough in the sev maker and rotate the handle to push the murukku out into the hot oil.

If you are making a chakri, make the swirl on the sieve and push in the hot oil or another method is to do it on the small cut size greaseproof paper and then, slip it into the hot oil, the paper can be pulled off. I go straight away by pushing the dough in the hot oil as you would do while making sev. When it is cooled, just break it and store in an airtight container.
