PIZZA SAUCE

There are many recipes to make pizza sauces. After trying a couple of them I concluded with this following recipe. It's the easiest one and no labour at all. I make it in bulk and freeze it. It can be stored in freezer up to a month. This sauce can also be used in pasta or gnocchis etc. I sometimes use the leftover pizza sauce with meatballs and it turns out delicious.

Makes 4 cups
Time: 45-60 minutes

1 tin chopped Italian tomatoes or 1 kg red tomatoes
1 tbs dried oregano
1/2 tbs dried thyme
2 tbs garlic powder or 3 cloves fresh garlic cloves minced
1/4 tsp chilli flakes (optional)
1 tbs olive oil
1/2 ts white pepper
1 tbs dried basil
2-3 tbs sugar

Method

Add all the ingredients in a pot and simmer on medium heat for 10 minutes. Rinse the tin with water and pour into the pot. Give it a stir and let it simmer further on low heat for 30 to 35 minutes till thickened.

I like to keep the sauce bit chunkier but if you want it smooth, you can blend it with the hand blender and continue the cooking process. Adjust the seasoning and use it as required on the pizza base
