T-BONE STEAK WITH FRIED ONIONS, CHIPS AND DRESSED ROCKET


Made this for my Husband's birthday. It was really nice. Both the boys enjoyed their dinner.




Serves 2
Time: 30 Minutes


For the steaks
2 T-bone steaks
Salt & pepper
1 tbs butter

For the compound flavoured butter
1/2 cup butter at room temperature
1 tsp lemon zest
2 tbs chopped parsley 
1tbs lemon juice

For the Onion rings
2 big onions sliced in rounds
Salt & pepper
1/2 cup yoghurt
1/2 cup water
1/4 tsp cayenne pepper
1 tbs lemon juice
1/2 cup plain flour


Method

Pat dry the steaks and season them well, then prepare the compound butter as well. Mix all the ingredients in a bowl and roll it into a log in a cling film and refrigerate till further use.


In the meanwhile, marinate the onion rings. Mix the yoghurt and water with lemon juice, salt and pepper and cayenne pepper. This way it gets enough time to soak up the flavours.


Heat the cast iron or any heavy bottomed pan. Sear the steak for 4 minutes on each side. Then tip it in the preheated oven at 200'C for 8 to 10 minutes, or less. Remove it and let it rest.


As the meat is resting, prepare the onion rings. Heat the oil. Remove the onion rings in an another bowl and toss with plain flour very lightly. Fry in hot oil until golden colour and crisp.

Serve the steaks topped with compound flavoured butter, fried chips, onion rings and dressed a salad.
