TANGERINE CAKE

One of those days when you have a sweet craving and you just want to make something quick and satisfying. So this is the cake I baked the other day. I was totally bored and had a sweet craving. There were 2 tangerines in my fruit bowl from the week's smoothie shopping and I could not resist it. I love citrus flavours in my baking or in desserts. Here is a quick recipe for this cake. Serve it with coffee or tea or as dessert when still warm with cream. You can also soak the cake in tangerine syrup. The recipe for the syrup is at the bottom of the recipe.



Serves 8-10
Time: 45 minutes 


Dry ingredients
2 cups plain flour
3 tsp baking powder
1/2 tsp salt

Wet ingredients
2 cups thick yoghurt
1 cup sugar
3 eggs
1 tbs tangerine zest
1 tsp vanilla
1/2 cup vegetable oil



Method

Sieve the dry ingredients first. Then beat the wet ingredients well it all mixed.

Fold the flour mix into the wet mixture and mix well again till no bubbles are left. 

Pour it into 2 greased loaf pans of 8'' by 4''. Bake in preheated oven at 180'C for 45 minutes. Check with a toothpick if the cakes are done. Don't worry if it cracks at the top.

Remove from the oven and cool it. Serve it as it is warm or soak it with tangerine syrup and then serve it.

Tangerine syrup is very simple to make. Basically, heat 1 cup of fresh tangerine juice with  2-3 tbs of sugar for 5-7 minutes on high heat. When it comes to rolling point remove it. Cool slightly and spoon over the cake when still in the loaf pans.
