TIKHA GATHIA / SEV ( FRIED INDIAN SPICY NOODLES)



Makes 400-500 grams
Time: 30 minutes



2 cups chickpea flour
1 tsp aniseeds ( ajwain)
1/2 tsp turmeric
salt
1/2 tsp black pepper
2 tbs hot oil
1 tsp garlic powder/ 1 clove fresh garlic minced
1 tsp red chilli powder
Enough warm water to make the dough


Method


Mix all the ingredients in a bowl.


Add the warm water and make the dough. The dough might be sticky but just apply some oil on your hands and divide the dough into two logs. Fit one log at a time in the sev machine fitted with medium sized hole plate. Fry it till golden colour. When it is done, you will see the oil bubbles going down. Remove and let it cool to crisp. Store in an airtight container.
