VANILLA PANNA COTTA WITH SOUR CHERRY JELLY

Panna cotta is an Italian dessert, which is simply heated cream infused with vanilla or other flavours of your choice and moulded with gelatin and served with berry sauces etc. I served my pannacotta with store bought sour cherry jelly because my son loves jellies. 






Serves 4
Time: 10 minutes to prepare and 4 to 6 hours to set or overnight is the best

For the pannacotta
250 ml double cream
250 ml milk
1/4 cup caster sugar
1/2 tsp lemon zest
 1 tsp vanilla
2 tsp gelatin powder
2-3 tbs water



For the jelly
1 packet sour cherry jelly crystals
water as required



Method

First, bloom the gelatin by sprinkling the gelatine on the water and set aside. After few minutes, gelatine will swell.

                                           


In the meantime, heat the cream, lemon zest and milk with sugar. When it comes to simmering stage, remove and let it cool slightly. 

               


Now take the bloomed gelatine and heat in the microwave for a minute to soften and mix in the milk and cream mixture. Then, mix this gelatine mix in the remaining cream mix. Pour this into individual ramekins or dessert glasses and let it set in the fridge.
                                                                                      

                                                   

                                                   


For the jelly, prepare it according to the instructions and when the pannacotta is set and jelly has cooled, pour on the top and let it set again. 

                                  

You can let it set for up to 4 to 6 hours or even overnight. 

If not using jelly, Take a punnet of berries and cook it with sugar3 till softened and serve with it or simply fresh berries and mint for garnishing.
