BRAISED BEEF IN RED WINE AND SUNDRIED TOMATOES
Serves: 4
Time: 2 hours
1 kg beef cubes tossed in 2 tbs plain flour
1 medium onions chopped
2 tbs olive oil
2 garlic cloves minced
1 bay leaf
1 cup red wine
2 cups beef stock
1/2 cup sliced sun-dried tomatoes
Salt and pepper
2 tbs tomato paste
3 tbs chopped parsley
Method
Brown the beef cubes well. Add the onions and garlic and cook for about 8 to 10 minutes.
Tip in all the other ingredients in the pan and let it cook for 2 hours, till the meat is tender and all the gravy is thickened. Serve it mashed potatoes, polenta, or crusty bread.
Tip: Instead of beef, lamb or pork can be also used.
This dish can be prepared in a slow cooker too.
