LAMB AND POTATO POT




Serves: 4
Time: 30 to 40 minutes



500-700 grms lamb cubes



1 medium white onion chopped

1 tsp fresh rosemarry chopped

2 garlic cloves minced

4 cups stock

1 tsp worcestershire sauce

Salt and pepper

1 tbs parsely chopped

1 tbs melted butter

4 to 5 medium potatoes sliced (1/2cm thick)

2 tbs plain flour




Method


Toss the lamb cubes in plain flour and brown it. Add the onions and the garlic. Cook along the lamb cubes.

Pour in the stock. Let it simmer for 10 minutes so that the lamb is cooked. Let it simer further about 10 minutes or so, to thicken the sauce.

As the lamb is being cooked, in another pot boil the sliced potatoes. ( just bring to one boil, 3/4 cooked). when done remove from the water and let it cool slightly.

Transfer the lamb in a baking dish. Arrange the potato slices on top. Spoon over the melted butter and sprinkle the chopped parsely, salt and pepper.

Tip the dish in the preheated oven at 200'C for 10 minutes to heat through and let the potatoes turn golden.


Serve this dish with aany greens. My personal favourite is steamed broccoli tossed in lemon juice and butter.
