LEMON,PEPPER AND GARLIC LAMB CHOPS SERVED WITH 
WARM POTATO SALAD


Serves 2
Time : 35 minutes


6 lamb chops
3 cloves garlic
1 tsp crushed black Pepper
salt
1 tbs chopped fresh mint
3 tbs olive oil
4 potatoes  boiled and quartered
2 spring onions chopped
1 tbs grainy mustard
1/4 cup good mayonnaise
Salt and pepper
A bit of chilli flakes


Method

  • Marinate the lamb chops for 30 to 60 minutes in blitzed garlic, black pepper, salt, mint and olive oil paste.
  • For the salad, mix mayonnaise ,mustard, salt/pepper, spring onions in a bowl then add the quartered potatoes . Give it lightly hand stir. ( salad can be mixed just before serving so keep the potatoes warm)
  • Heat the pan and brown the lamb chops on the sides about 3 minutes each side. Finish the rest of cooking in the preheated oven 200'C for 8 minutes. 
Serve the lamb chops with the warm potato salad.
