PORK CHOPS, SWEET POTATOES AND APPLES
Time for cooking and preparing : 40 minutes
2 Pork chops about 2 inches thick
1 big sweet potato diced
1 apple diced
1 tbs olive oil
1 tbs chopped parsley
1 tbs red wine vinegar
1 medium white onion roughly chopped
salt and pepper
Method
- Season the pork chops well and keep them aside.
- In a pan heat the olive oil, add the onions, sweet potatoes and apples, the add the red wine vinegar. Saute' them till cooked and charred on the edges. This will take about 10 minutes on medium-high heat. season it well.
- As the potato mix is cooking.. heat another pan and brown the pork chops on both sides on high heat, about 3 minutes each side. lift the chops and arrange it on the potato mix pan.
- Cook it further in the preheated oven at 200'C for 8 minutes to 10 minutes.
Serve the dish by plating the potatoes and apples first followed by pork chop on top. This dish goes well with crisp green salad on.
