BUTTERNUT, POTATO AND BACON HASH


Butternuts and pumpkins are my family favourite vegetables. It's buttery texture and the sweetness can be paired with any main meal or just served on its own as soups, roasted, baked, mashed or any form.  Here, I used the butternut with potatoes and bacon. Yes, BACON,  when added a bit in any dishes it just enhances the taste. For the vegetarians, you can always omit the bacon. Serve this hash as a side dish with turkey, ham or goose. 




Serves 4
Time 30 minutes


1 butternut diced about 2 to 2 1/2 cups
1 big potato diced same as pumpkin
2 - 3 bacon rashers chopped
1 tbs parsley
1 tbs olive oil
1 small onion chopped
1 tbs butter
Salt & pepper


Method


Heat the oil in a pan. Cook the bacon and onions till softened and slightly browned.

In a baking dish, toss in the butternut, potatoes and the bacon mix. Season it well. Add butter and parsley and roast in the oven for about 20 minutes, till cooked and charred a bit. 

This can be cooked on gas top also, just reduce the heat and add a splash of water to cook the potatoes and butternut. When done remove the cover and cook further to dry the moisture and to get the char marks.

Serve it with chicken, duck or with pork chops as I did. You can also serve it as breakfast/brunch with fried eggs.
