PEAS AND ONIONS


PEAS AND ONIONS




Serves 2
Time 10 minutes


2 cups peas
1 medium white onion sliced
1/4 cup stock
Salt & pepper
1 tsp butter
a few mint leaves 



Method

Add butter and onions to the pan. When onions are softened, add the peas, stock and seasoning. Let it simmer so that the peas are cooked and most of the stock is evaporated. Stir in the mint leaves and serve them at once with fish pie, lamb, chicken.
