CARAMEL POPCORN



CARAMEL POPCORN



Serves 8 to 10 cups
Time 20 minutes


8-10 cups popped popcorn
1 1/2 cups sugar
4 tbs butter
1 tsp salt
1 tsp vanilla 
3/4 cup water
1 tsp baking soda


Method

Make the caramel by cooking the sugar, water and butter together. when it reaches the one string syrup, add the vanilla and salt. Give it a stir. Take it off the heat and add the baking soda, as soon as the baking soda is added the mixture bubbles up. Pour this mixture over the popcorn and using two spatulas mix and turn the popcorn.

Layer it on an oven tray and  bake in preheated oven 170'C for 10 minutes or so ( sugar starts caramelising). Remove it and let it cool. 

Store in an airtight container up to a week.

TIP: Different nuts or pretzels can be added to the mix too when the caramel mix is poured.
