PRAWNS AND COURGETTE CURRY




Serves 4
Time: 30 minutes


250 grams prawns
1 big courgette sliced or diced
2 garlic cloves minced
1 onion finely chopped
1 can tomato or 4 tomatoes chopped
salt and pepper
1 tbs oil
1 tsp paprika
chopped coriander

Method 

Heat the oil and add the onions. Fry them till softened.

Add the garlic to it. After few seconds, pour the tomato tin or the chopped tomatoes in with rest of the ingredients. 

Cook for few minutes till the oil starts separating. To this add the prawns and mix well so that the tomato mixture is well coated. season it well. ( water can be added according to the consistency of gravy)

Just when the prawns are almost cooked, stir in the courgettes. Cover till about to serve. You don't want the courgettes soggy, they should have a bite to it. Garnish with chopped coriander and  serve on the hot bed of rice or with chapati or bread. 

TIP: Instead of prawns, fish can be used too.
