CHICKEN BREAST BAKED IN YOGHURT SAUCE
Serves 2
Time 30 - 45 minutes
For the chicken breasts
2 chicken breasts
1 cup yoghurt sauce
salt & pepper
1 tbs chopped parsley
For the grilled potatoes adn spring onions
4 potatoes boiled and sliced lengthwise
4 -5 spring onions cut in halves
pepper & salt
1 tbs lemon juice
1 tbs olive oil
Method
Make small slits in the chicken breasts and marinate in the yoghurt sauce ( leftover sauce from the Indian lamb kebabs) for 30 minutes or so. Bake in preheated oven 200'C for 20-25 minutes till slightly charred and cooked.
For the potatoes, just boil them until fork tender and toss them with spring onions in olive oil, salt and pepper. Heat the griddle pan very hot and arrange them on it. cook till you can see the charred marks on them. Remove and mix in lemon juice and adjust the seasoning.
Let it rest for few minutes and serve with grilled potatoes and spring onions.
