COD BAKED IN MINT & CORIANDER SAUCE SERVED
WITH COUSCOUS AND ZUCCHINI
To make this, all you need is fish , zucchini and couscous. It's actually a healthy meal for the family.
The sauce used in this dish can also be used in marinating lamb or chicken.
Serves 4
Time : 40- 50 minutes
For the fish & zucchini
2 fillets of cod ( any firm white fish)
1/2 cup mint & coriander sauce ( green chutney)
salt & pepper
Hand full cherry tomatoes
1 tbs olive oil
For the Couscous
1/2 cup couscous
1 cup water
1/2 tbs butter
1 small onion finely chopped
1 medium cucumber diced finely
2 tbs golden raisins soaked in hot water for 5 minutes
1 tbs parsley chopped
1 tbs lemon juice
Salt & pepper
1 tbs olive oil
Method
For the fish,zucchinis and cherry tomatoes, just marinate the fish fillets with green chutney for at least 10 to 15 minutes. Then tip it in preheated oven 200"c for 15 to 20 minutes till fish has turned white and zucchinis are just roasted (it should have a bite).
For the couscous, boil 1 cup of water with salt. Add the couscous to the water and stir. Switch off the heat and cover. Once it has soaked in the water, Add butter, take a fork and fluff it up.
Cool it, to this add the chopped onions, cucumber, lemon juice, golden raisins, parsley and seasoning. Toss it well and just before serving mix in olive oil .
