CRISPY FRIED CHICKEN


CRISPY FRIED CHICKEN

Fried chicken meal is a good meal to have with family and friends. A comforting food for all whether kids or adults. I like to fry my own chicken. Chicken pieces are seasoned with herbs and spices or marinated in buttermilk or yoghurt overnight or at least 1 to 2 hours. then, roll into flour and fry till crisp and golden. fried chicken can be served with many sides, such as mashed potatoes, beans, gravy etc. I like to serve with chips and coleslaw. 



Serves 4-6
Time: 1 hour marinating + 30 minutes


Seasoning the chicken
1 tbs salt (celery salt is best)
1 tsp  black pepper
1 tbs red chilli flakes ( can be adjusted)
1 tsp cayenne pepper
1 tsp lemon pepper
1 whole chicken cut in 8 to 10 pieces or 12-14 chicken wing joints cut in 1/2


For the flour batter
2 eggs
1 tbs hot sauce 
1 tsp chilli flakes (optional)
1/2 tsp salt
1 tsp black pepper
2 cups plain flour
Oil to fry



Method

For seasoning the chicken, mix all the dry spices in a bowl. Rub the seasoning into the chicken really well. Because that's the flavour you will enjoy after frying. Make sure you reserve a tsp or 2 or just make 2 batches. This seasoning will be used later after frying the chicken to give it an extra flavour or I should say Zing.




For the batter mix, have three bowls on your kitchen counter. One which has the chicken, second with beaten eggs mixed with hot sauce and third with plain flour, pepper and salt. 

Take the chicken piece one at a time, dip in egg mixture then toss in flour mixture. Now here, the trick to get flour on the chicken piece use your hands very lightly, or put the flour in a zip lock bag and put 2 to 3 pieces of chicken and shake. Shake off the excess flour and fry in hot oil. 

Fry till golden brown and crisp. Drain off on a kitchen towel, toss some seasoning spice and serve with fresh coleslaw and chips and a can of cold coke or beer.
