TUTTI FRUTTI CAKE WITH LEMON GLAZE
Sharing easy and delightful cake recipe. I have sticked to this cake recipe since I started baking and I have never gone wrong with it. Any dry fruits or nuts can be added to this batter, its totally choice. The lemon glaze just gives a nice flavour to the cake. Incase one doesn't lemon, orange juice is fine too. Do bake it. Enjoy with a cup of tea or coffee with your closed ones.
Makes 2 small loaves or 1 big loaf or 8'' round cake
Time : 35 to 40 minutes
For the cake
1/2 cup butter or margarine
1 cup caster sugar
2 tbs golden syrup
1/2 cup tutti frutti ( can add more) tossed in 1 tbs plain flour
2 eggs
1 1/3 cup self raising flour
1/4 tsp baking powder
1 tsp vanilla extract
For the glaze
1 cup icing sugar
Few tsp lemon juice
Few tbs of tutti frutti for sprinkling
Method
Cream butter and sugar until light and creamy. Add in syrup and eggs one at a time. Sift the flour and baking powder and fold into mixture. Add in vanilla. Fold in the tutti frutti.
Bake for 35 to 45 minutes in preheated oven at 180' C, risen and golden brown.
For the glaze, Mix the sieved icing sugar with few tsps of lemon juice. Pour onto the cake and sprinkle some tutti frutti on top. Let it set for few minutes. Serve it at tea or coffee time or a dessert with custard/ice cream.
