CRISPY FRIED PORK


CRISPY FRIED PORK 

I love the Chinese food, especially the fried pork, chicken or shrimps. They are my favourite. In order to get the perfect crispiness, the batter has to be perfect. I use only one recipe for any frying, whether it's the following dish or the English fish and chips. Yes, you can adjust the seasonings or add spices to it. But the batter ingredients remain the same.




Serves 4
Time : 20 minutes



For the batter
1/2 cup plain flour
1/2 cup cornflour
1 tsp salt
1/2 white pepper
a pinch of sugar
1/2 to slightly more cold water to form the batter

500 grm pork cubes
salt and pepper
2 tsp  Chinese rice vinegar


Method

Start by marinating the pork cubes in vinegar, salt, pepper and soy sauce. Keep it aside for 10 minutes. 

In another bowl, mix the batter ingredients. Mix in the pork cubes and keep in fridge until the time of frying.
 When frying, make sure your oil is hot. It should be fried till golden brown.  Serve with sweet and sour sauce, some vegetables like broccoli and fried rice.

TIP: Instead of pork, chicken, mushrooms, cauliflower or prawns can be used.
