EGG, TURKEY AND VEGETABLE MUFFINS
An easy handheld breakfast. The base of these muffins are eggs, milk, cheese and plain flour, rest of ingredients can be of one's choice. In my case, I added chopped turkey meat, bell peppers, spring onions and some leftover peas and onions. They are a seriously great time saver. Make a big batch for those busy mornings. They are also great for a sandwich, just pop them in the bagel, buns or bread slices and serve with salad on the side. They are also great for kids parties or some sort of getting together.
Serves 4
Time: 35 minutes
6 eggs
3/4 cup milk
1 cup grated cheddar cheese
1/4 cup diced red pepper
1/2 cup peas
2 spring onions chopped
Salt & pepper
3 tbs plain flour
1 tbs parsley chopped
Method
Whisk all the ingredients in a bowl and pour in 12 muffin hole tray. Bake them in preheated 190'C oven for 25 to 30 minutes till puffed up and golden on the top.
TIP: Use pam spray to grease the muffin tray or grease with oil and plain flour or better to use silicon cupcake liners.
