HAM AND VEGETABLE TARTS 

Bread makes a great base for these tarts, but puff pastry is fine too. With a nice topping of  ham, vegetables, tomatoes, cheese and oregano, they make pretty little non-messy finger foods. Just serve them to kids or older group  and watch them enjoy themselves. Ideal finger food for gatherings , birthday parties etc.






Makes 4 tarts
Time: 30 minutes




1 tbs oil
1/4 cup chopped onions
1/4 chopped spring onions
1/4 chopped red/yellow bell pepper
1 tbs tomato ketchup
1 tsp chilli sauce ( optional)
4 slices bread cut in rounds with big cookie cutter
4 tbs shredded cheese ( mozzarella/cheddar)
1 tsp oregano
1 big tomato sliced (4 slices to top each tart)


Method

Brush the tomato slices with little oil and season with salt and pepper. Keep aside. 

Heat the remaining oil, lightly fry the onions, spring onions, bell peppers and ham. Remove from the heat and stir in ketchup and 1/2 of the oregano. 


 Toast the bread slices, butter them. Assemble the vegetables on the toasts first, then top with tomato slices and cheese.

Tip them in preheated oven 180'C for few minutes so that the tarts are heated through and cheese is melted.  Serve them with tomato ketchup or just on its own.

TIP: You can vegetarian tarts by omitting ham. If one doesn't eat ham,  diced chicken can be used.
