BESAN ( CHICKPEA FLOUR) PANCAKES
Make these pancakes with zucchini or any other vegetables. These are healthy pancakes ideal for breakfast, brunch, dinner or even for people who are losing weight. I love having them with green and tamarind chutney.
Serves 4
Time 30 minutes
2 cups chickpea flour ( besan)
1/2 tsp garlic paste
1/2 tsp ginger paste
1 cup grated zucchini ( don't squeeze the moisture out)
1 small onion finely chopped
2 tsp coriander chopped
2 tbs fenugreek ( methi) chopped
1 tsp cumin powder
1 tsp coriander powder
salt & pepper
few green chillies
4 tbs yoghurt
1 tbs tomato grated
Enough water to blend
some oil or ghee for brushing
Method
Mix everything in a bowl by adding enough water. The batter should be not very thin nor thick.
Let it rest for 5 to 10 minutes. Then, heat a nonstick pan and cook the pancakes by ladling 1/4 to 1/2 cup on medium high heat. Brush the edges with little oil or ghee. Cook one side for 2 to 3 minutes then turn.
Serve these pancakes with green chutney or tamarind chutney.
