ONE BOWL CHOCOLATE CAKE

ONE BOWL CHOCOLATE CAKE 








Serves 6-8 
Time : 60 minutes


For the cake base

2 cups plain flour
1 cup caster sugar
2 tsp baking powder
1 1/2 tsp baking soda
3/4 cup cocoa powder
1/2 tsp salt
2 eggs
2 tsp vanilla
1 cup milk
1 cup hot water
2 tsp coffee powder
1/2 cup oil

For the whipped cream frosting

2 cups whipping cream
1/2 cup icing sugar
1/4 -1/2 cup cocoa powder
1 tsp vanilla

Method


Sieve the dry ingredients first in a bowl. To this add the wet ingredients and beat well till all is mixed and creamy. Pour the batter into two 9'' round tins  and bake in preheated 180'C oven for 25 to 30 minutes. Then remove and let  it cool on the wire rack.

For the frosting, Whip the whipping cream with icing sugar and cocoa powder till soft peaks form. refrigerate it.

Once the cake is cooled, frost the first cake on the top and sandwich it with the second cake. Using a cake spatula apply the cream around the cake and using a piping bag decorate the cake. Sprinkle some chocolate shavings or whatever you may like. I also used the leftover chocolate magic sauce around the cake.

TIP: This cake is the simplest and fastest cake to bake for the beginners. It's all one bowl cake ,therefore no confusion. Works well for cupcakes too.
