PEPPERS STUFFED WITH RICE AND SAUSAGE MEAT SERVED ON TOMATO SAUCE
Serves 4
Time: 30 minutes
For the peppers
4 peppers ( red/green/yellow)
1 cup cooked rice ( leftovers work well too)
1/2 cup beef/pork/lamb/chicken sausage meat ( off the casing)
1 tbs chopped parsley
1 small onion chopped
1 garlic clove chopped
1 tbs olive oil
Tomato sauce
4 tomatoes chopped
1 tbs onion chopped
1 garlic clove chopped
1 tbs olive oil
salt & pepper
Method
To make the stuffed peppers, heat the oil and fry the sausage meat first, then add the onions and garlic in the same pan. Cook for few seconds till onions are softened.
Add the rice to this mixture with a 2 to 3 tbs of tomato sauce which is cooked to serve with the peppers.
Stuff the rice mix in the peppers and cover with the pepper tops and bake in the preheated oven 190'C till slightly charred at the top.
Spoon the sauce on the plate and arrange the stuffed pepper on it . Garnish it with parsley and serve at once.
For the tomato sauce, saute the onions and garlic in the oil. Tip in the chopped tomatoes along with the seasoning and a pinch of sugar. If the consistency is too thick just add a splash of water. Mix in chopped parsley and let it cook till oil separates.
TIP: For the vegetarians, your choice vegetables chopped can be used instead of sausage meat.
