RED THAI CHICKEN CURRY
Serves 4
Time: 35- 45 minutes
500 grams chicken boneless cut in bite size
2 tbs red thai curry paste
1 tsp ginger paste
1/2 tsp garlic paste
1 can 250 ml coconut milk
2 tbs lime juice
1 tsp red chilli powder
chopped coriander leaves
1 tbs oil
1 cup water
Vegetables of your choice ( diced pumpkin, green beans, diced eggplants, sliced daikons)
Method
Cook the ginger and garlic paste in oil for few secoonds. Then, add the red thai curry paste with little water. Stir.
Add the chicken pieces to the paste and cook till all coated well. Add the coconut milk, lime juice, chilli powder and 1 cup of water. Bring it to a boil. At this stage you can add the vegetables too if you prefer.
Garnish with chopped coriander leaves and serve with hot rice.
TIP: For vegetarian option, one can use fried tofu or paneer or just the vegetables.
