WAFFLES
Nothing beats the smell of homemade waffles. For me, making waffles is a fun time with my son. Especially, when he is the kitchen helping me.
I have tried many recipes to make waffles, but either they stick to the waffle maker despite greasing it or they turn out very soggy. The secret to CRISPY waffles is CORNFLOUR!
Try it and enjoy. :)
Serves 4
Time 15-20 minutes
1 cup milk
1/3 cup oil
1 egg
1 tsp vanilla
1 cup plain flour
1/4 cup cornflour
1 tbs sugar
a pinch of salt
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp vinegar
Method
Preheat the waffle maker according to its settings. Each waffle should take about 3 to 4 minutes or 5 minutes for really dark and extra crisp.
First, mix all the wet ingredients in a bowl, I like mixing in a large jug as it makes sit easy to pour the mixture.
Second, sieve the dry ingredients in another bowl.
Pour the wet mixture into the dry and whisk well with a hand blender or beater. Then add the vinegar. Give it a stir and leave it for few minutes till it starts bubbling. Grease the waffle maker and pour in the mix, close and let it cook.
Serve it hot with butter, syrups, creams or like I served with vanilla ice cream.
TIP: If one wants savoury waffles, you can omit the sugar and adjust the salt. Fresh or dry herbs can also be used to flavour them.

I have tried this recipe for my son when he was allergic to dairy products.
Serves 2
1 tbs flax seed meal
3 tbs warm water
1 tbs coconut oil melted
1 cup plain flour
2 tsp baking powder
1 tbs sugar
pinch of salt
1 cup almond or soy milk
1 tsp vanilla
Method
Follow the above method. mix the wet ingredients into dry. The cooking process is same as for the normal waffles.
