APPLE PIE WITH PUFF PASTRY



Serves 4
Time: 20-25 minutes



2-3  granny smith apples, peeled, cored and cut into slices
4 tbsp  butter
1/4 cup brown sugar
1 tsp cinnamon powder
1 sheet frozen puff pastry, thawed 
Plain flour for dusting
1 egg for egg wash
Caster/icing sugar for sprinkling



Method

In a pan, melt 4 tbsp butter over medium heat. Add sliced apples and cook, stirring until lightly browned. Reduce heat to low and stir in ¼ cup brown sugar and 1 tsp cinnamon. Simmer, stirring until apples are soft and caramelised
.
Lightly dust greaseproof paper with flour. Place the thawed puff pastry dough over it and roll it out slightly to flatten the top. Cut puff pastry dough in half down the centre to make two pieces.

Arrange apples in a tight row lengthwise down the middle of one puff pastry sheet leaving a bit of space for the border on all sides. Pour remaining syrup over the apples over the top of the apples. 

Brush egg wash on the edges of the pastry. Top with the second pastry sheet and press down on the edges to seal.

Cut 6 slits down the centre of your pastry to create vents.

Brush the pastry with egg wash and sprinkle the top with caster sugar. Bake at 200'C for 20-25 min or until top is golden brown.

Serve warm dusted with icing sugar with a scoop of ice cream or just at room temperature with a cup of tea or coffee.
